We have a 13 week old Springer spaniel. She is absolutely brilliant already....has been housetrained for the last 3 weeks, sits, stays and won't touch food two inches away from her until we tell her she can have it.
BUT she drives us mad in the car. She was fine when very young, but now whines and goes mad when we get in the car....untill we are travelling at speed, when she goes to sleep. The second we slow down she starts creating again.

Now, I would perhaps say she's young and will grow out of it, but our last spanial cross did the same thing - and was still doing it 15 years later !!

Any tips on how to break her of this habit? I don't want it to become normal behaviour.

Some dogs get a little over stimulated with everything moving past the car.
At speed the dog might not be as aware of the things passing but when you slow down it can focus on things.
He you tried putting the dog in a crate or something like that so that it can't see out the window?

^^thats right, he can get use to it....
